Miso Soup with Shitake Mushrooms
serves 4
Ingredients
- 4 C chicken or vegetable broth
- 2 C shitake mushrooms, sliced
- 1/4 C miso paste
- 4 t soy sauce
- 1/3 C firm tofu, diced
- 2 ea scallions, thin slice
- Options: substitute chicken for the tofu.
Instructions
- Bring the broth to a boil, then add the mushrooms and simmer until the mushrooms are done. Add the miso paste, soy sauce and tofu and heat through.
- Plate, garnish with the scallions, and serve hot.
